Always make sure all ingredients are room temperature, unless stated otherwise.

Softened butter means taking out the butter 30-60 minutes in advance so it’s at room temperature.

Melted butter means fully melting the butter in the microwave or on the stove

 To store already peeled potatoes, put them in cold water in an airtight container and refrigerate them up to 3 to 4 days.

Adding a couple of drops of vinegar when cooking chicken or meat gets rid of any odour.

For perfectly cooked basted eggs, add a teaspoon of water into the skillet when the egg turns white around the edges.

Easiest and fastest way to cook poached eggs, guaranteed to work every time, is to simply microwave the egg in a teacup of water for one minute (longer if you prefer them well done).

If, like me, you don’t have a pressure cooker or rice cooker, use aluminum foil to cover the pot and trap the steam when cooking it.

It isn't likely you'll find buttermilk in the UAE, so when the recipe calls for it there's an easy way to make it right at home. Add 1 cup of full fat milk to 1 tablespoon of lemon. Stir, set aside for 5 minutes, and you get buttermilk.
