CREAM OF TOMATO MUSHROOM SOUP
This recipe was passed on to me by my sister, and has quickly become a staple in our family. The soup is deliciously rich, creamy and full of flavor, and with just a handful of ingredients, is super easy to make!
INGREDIENTS
2 packets mushroom soup
1 cup fresh mushrooms, sliced
2 cloves garlic, minced
1/4 cup tomato paste
1/4 cup heavy cream
1/2 cup grated parmesan
Salt and pepper, to taste
PREPARATION
1. Prepare the mushroom soup according to package instructions.
2. In a separate pot, sauté garlic cloves with sliced mushrooms until tender and fragrant.
3. Once the mushrooms have browned, add the mushroom soup over it, and stir to combine ingredients and flavors.
4. Add the tomato paste, cream and parmesan and mix until all the ingredients are well incorporated. Season with salt and pepper, to taste.
5. Now bring soup to boil for approximately 5 minutes, allowing all the ingredients to really simmer and become flavorful.
6. Once ready, you can add a sprinkle of some freshly cracked pepper, and top with more freshly sautéed mushrooms.
7. Serve with toasted bread.
Notes:
You could use regular mushroom soup or cream of mushroom soup for this recipe. Any brand works.
You could also choose to prepare your own mushroom soup from scratch.
You could add fresh tomatoes for an extra layer of flavor.
