CHOCOLATE MOUSSE CUPS
Satisfy your chocolate craving with this fluffy, rich and eggless Chocolate Mousse recipe. With a hint of coffee flavor for the perfect after-dinner dessert.
INGREDIENTS
400g dark chocolate, roughly chopped
600ml heavy cream
1/4 cup of black coffee (cooled)
1 teaspoon vanilla extract
PREPARATION
1. Place roughly chopped chocolate in a heatproof medium bowl (stainless steel or tempered glass) over a water bath. Once the chocolate begins to melt, stir until completely melted and smooth. Set aside to cool.
2. With a handheld mixer, beat the heavy cream, coffee and vanilla until soft peaks form. Do not over mix, as the cream may become curdled if you do.
3. Fold the cream mixture into the melted chocolate bowl and mix until well combined.
4. Pour chocolate mixture into individual cups or a large bowl or any other way you prefer to serve it, then smooth the top with a spatula or a back of a spoon.
5. Refrigerate until the chocolate mousse is set.
6. You may top with cocoa powder, chocolate shavings, nuts, berries or even crushed Oreos!
Notes:
For the chocolate I like to use either 100% dark Lindt chocolate, or the Hershey’s semisweet baking bars.
Make sure the coffee is completely cooled, because if it is even a little warm it could curdle the cream when you mix them together.
With this recipe you can get creative with how you serve it! You could choose to start off with a base of crushed Oreo crumbs mixed with butter and pour the chocolate mousse over it, or create a chocolate cake base with the chocolate mousse on top, which makes for a delicious treat.
