STRAWBERRY CHEESECAKE MOUSSE CUPS

This deliciously refreshing dessert is the perfect remedy for the incredible heat and humidity of the summer! It is rich and creamy, with the taste of fresh strawberries bursting in your mouth with every bite. Make ahead and serve at any occasion!

INGREDIENTS

For the crust:

  • 5-6 pieces digestive biscuits, crushed

  • 2 tablespoons butter, melted

For cheesecake mousse:

  • 1/2 cup heavy whipping cream

  • 1/3 cup and 2 tablespoons powdered sugar

  • 200g of cream cheese

  • 1 cup fresh strawberries, pureed

  • 1/2 teaspoon vanilla essence

  • Fresh strawberries for garnish

PREPARATION

1. For the crust, mix the crushed biscuits with the melted butter in a bowl and set aside. 

2. In a separate bowl, beat the heavy cream until stiff peaks form, then add 2 tablespoons of powdered sugar, beating to combine. Set aside.

3. In another bowl, beat the cream cheese with a 1/3 cup of powdered sugar until smooth.

4. Add the vanilla essence and fold in the strawberry puree, stirring until evenly combined.

5. Finally, fold in the whipped cream mixture and stir to combine all ingredients really well, forming a creamy and rich mousse.

6. In individual cups, layer the crust at the base and top with the strawberry cheesecake mousse mixture. 

7. Garnish with fresh strawberries and refrigerate until ready to serve. 

Notes:
You can always choose to make this in a cake pan, instead of individual cups.

You can try a variety of flavors, such as lime, lemon curd, or different types of berries.
