LABANEH SANDWICH
This super quick and easy labaneh sandwich is a very popular Arabic snack that can be eaten any time of day! The combination of labaneh with fresh veggies, mint and za'atar never fails to satisfy, and is truly delicious.
INGREDIENTS
Arabic pita bread
Labaneh (strained yogurt or yogurt cheese)
Cucumber slices
Tomato slices (cut in half)
A handful of roughly chopped mint
Kalamata olives, pitted (or any other kind of olives available to you)
Olive oil
A pinch of za'atar seeds (a Middle Eastern spice made of oregano, marjoram and thyme) for that tinge of salty and sour taste
PREPARATION
1. Slather the labaneh on the bread
2. Sprinkle a pinch of za'atar on top (you can opt to leave this step out, but that would be a huge mistake!)
3. Drizzle with olive oil.
4. Top with the vegetables: cucumbers, tomatoes, mint and kalamata olives (or any other kind you prefer).
5. Dig in! Best served with a cup of tea.
Notes:
With sandwiches, it's always about preferences. Veggies, no veggies, add tomatoes, olives, you can add cheese (halloumi cheese is delicious with labaneh), or mix with feta cheese, more herbs and so on. Don't hesitate to deviate from the recipe and go with what you prefer!
You can use any type of bread available to you to make sandwiches.
