MEDITERRANEAN PASTA SALAD

This Mediterranean-style salad is light, refreshing and bursting with colorful rounds of cherry tomatoes. It is the perfect summer meal, overflowing with flavors!

INGREDIENTS

  • 2 cups dry pasta (I like to use Fusilli, but you can use anything you prefer)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup kalamata olives, pitted and chopped

  • 1/2 cup red onion, finely chopped

  • 1 cup fresh parsley and basil - minced

  • 1/2 cup pine nuts toasted

  • Splash of olive oil and balsamic vinegar

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

PREPARATION

1. Cook pasta in salty water until your preferred level of doneness.

2. Toast your pine nuts in a bit of olive oil until browned.

3. In a large bowl, toss together cherry tomatoes, kalamata olives, red onion, herbs and pine nuts.

4. Add pasta to the bowl and drizzle with olive oil, balsamic vinegar, salt and pepper. Adjust seasoning and dressings according to your preferred taste.
