OLIVES AND HERBS WITH CHEESE BRUSCHETTA
Super easy to make and prepare ahead of time, these delicious, fragrant and flavor-packed quick bites are perfect for gatherings!
INGREDIENTS
1 cup kalamata olives, pitted and chopped
1 cup green Spanish stuffed olives, chopped
3 garlic cloves, minced
3 tablespoons of fresh oregano, chopped
A handful of fresh basil leaves, chopped
3 tablespoons of olive oil
Juice of 1 lemon
100g of cream cheese
100g of feta cheese
Baguette bread cut into slices
Salt and pepper to taste
PREPARATION
1. In one bowl, mix together the olives, garlic, herbs, olive oil and lemon juice, adding salt and pepper to taste.
2. In another bowl, mix together the cream cheese and feta.
3. Meanwhile, dip the sliced baguettes into a little olive oil and bake in a preheated 175°C oven for about 10 minutes until golden.
4. Finally, top the bread with the cheese then with the olives and herbs mixture.
Notes:
Feel free to change up the quantities of the cheeses depending on your personal tastes.
You could use any type of bread to make these bruschetta. Ciabatta, sourdough, baguette or even toast bread works.
