PUMPKIN CHEESE BRUSCHETTA
This recipe is the perfect snack or appetizer for the festive season! A delicious spin on the classic bruschetta, the combination of pumpkin and cheese with a hint of spice will tease your tastebuds and put you in the right mood for the holidays!
INGREDIENTS
Single serving:
1 slice of sourdough bread
1 tablespoon olive oil
1/2 tablespoon pumpkin purée
1.5 tablespoon cream cheese
1/4 teaspoon garlic powder
A pinch of nutmeg
A pinch of sea salt
A dash of black cracked pepper
Top with mixed greens
PREPARATION
1. Drizzle the olive oil over the slice of bread and spread evenly, then toast it for 3 to 4 minutes until browned (alternatively you can place it in a preheated oven for the same amount of time).
2. In a small bowl, mix pumpkin purée with the cream cheese until smooth, then add the garlic powder, nutmeg, salt and pepper and mix together until well-combined.
3. Spread pumpkin mixture onto the toasted bread and top with mixed greens.
Notes:
Always taste as you go, because it really is all about personal taste.
Feel free to take these ingredients, and experiment until you reach the perfect balance for you, be it less pumpkin, more seasoning or less spice. It all works!
If you want to make this for a larger group of people, you'll want to use a full loaf of sliced sourdough bread with 1/4 cup pumpkin purée and 200g cream cheese. You can season and taste as you go.
