SIMPLIFIED SHRIMP PAELLA
For those busy days, why not use those leftovers to make a satisfying, wholesome meal in half the time it would usually take using only six ingredients?
INGREDIENTS
4 cups cooked rice
2 cloves garlic, minced
1 medium onion, diced
1 cup shrimp
2 tablespoons olive oil
1 tablespoon paprika
1 tablespoon tomato paste
Salt and pepper to taste
PREPARATION
1. In a large saucepan, heat olive oil over medium-high heat and sauté onions and garlic until glistening and translucent.
2. Add shrimps and stir until they are cooked through.
3. Add one tablespoon of tomato paste and one tablespoon of paprika and stir until well-blended.
4. Finally, add rice and mix really well, making sure it is evenly coated and combined.
5. Your simplified paella is now ready to serve, you may garnish with parsley, slices of lemon or anything else you prefer.
Notes:
Traditionally, paella is made by cooking the rice in stock or broth with the rest of the ingredients, but this is why this is a simplified easy version that uses pre-cooked rice.
Historically, paella is derived from the Arabic word “baqaya - بقايا” which means “leftovers”. Leftover food was mixed with rice to make delicious rice dishes, and so perhaps, in some way, this method of making paella is actually closer to its origins than we think!
