FOUL SAMBOUSEK (FAVA BEANS)

A super quick and easy snack to prepare, these vegetarian sambousek are filled with the distinct and unique flavor of foul mudammes (fava beans).

INGREDIENTS

  • Sambousek pastry sheets

  • 1 can fava beans (any kind of flavor or mix)

  • 2 teaspoons lemon juice

  • 1 teaspoon cumin

  • 1 teaspoon salt

  • 1 garlic clove, minced

  • 1 small tomato, finely chopped

  • 1/4 cup onion, finely chopped

  • 1 small potato, boiled and mashed (optional)

  • Frying oil

PREPARATION

1. Over medium heat, empty the contents of the fava beans can in a saucepan and heat until warm, but not very hot.

2. Once ready, strain it from any liquids, and add the lemon juice, salt and cumin. Stir until well-combined.

3. Then add the garlic clove, tomatoes and onions and mix really well.

4. You can stop here, and start filling up the pastry sheets, or add the mashed potatoes to give it a thicker consistency to allow you to fill the pastry sheets easier.

5. Once you add the already cooked and mashed potatoes, make sure to mix thoroughly. At this point, you’ll want to taste and check if you need to adjust the seasoning.

6. Using the sambousek pastry sheets, begin by placing 1-2 tablespoons of the fava beans mixture in the top corner of the dough sheet. Roll it in layers to form a triangular shape. Brush the last layer with a bit of Kraft cheese spread or beaten egg or a little water mixed with flour and close it.

7. Repeat until the mixture is done.

8. Heat the frying oil in a pan, then deep-fry the sambousek until they turn a nice golden color. Make sure you don’t overcrowd the pan, fry them in batches until you get the quantity desired.

9. Serve immediately, as they are best eaten hot. Best served with a side of tahini dip, pickles and olives.

10. Alternatively, you can skip steps 8 and 9, and store the sambousek in ziplock bags and freeze them for up to 6 months.

Notes:
You can prepare your own dough, or use different kinds of pastry sheets to make sambousek.

You can also make different sambousek shapes besides triangles.

A healthy alternative is to bake them in a 200C preheated oven for about 15 minutes or until they turn a golden brown.

You can try different fillings, such as cheese, meat, chicken, or vegetarian by opting out of using any protein.
