RED KIDNEY BEAN BULGUR SALAD
Super easy hearty salads are always easy to whip up! This red kidney bean bulgur salad is tasty, healthy and nutritious and will easily fill you up for hours!
INGREDIENTS
For Dressing:
1 cup olive oil
Juice of 1 lemon
1 teaspoon salt
1/2 teaspoon cumin
1 teaspoon dijon mustard
For Salad:
1 can red kidney beans
1 cup cooked bulgur
1 cups cherry tomatoes, halved
3 cucumbers, diced
2 yellow capsicums, diced
1 spring onion, sliced
1/2 red onion, diced
1 cup corn
1/2 cup, green olives, chopped
1/4 cup, chopped herbs (such as parsley or dill)
PREPARATION
1. Prepare the dressing by combining all the ingredients in a bowl, and stir continuously with a whisk. Adjust seasoning as needed.
2. Prepare the rest of the salad ingredients in a large bowl and set aside.
3. Add the cooked bulgur to the dressing and mix to coat it well, then set aside for a few minutes allowing it to absorb all the flavor.
4. Stir in the bulgur to the salad bowl, and toss really well.
5. Taste and adjust seasoning as required. Garnish with fresh parsley leaves if desired.
