PARATHA CHIPS OMAN

This childhood favorite is the epitome of UAE street food with some claiming it's become an unofficial national dish. The hot and flaky paratha smothered in cheese, perfectly complements the crunch of the spicy Chips Oman, making it the perfect snack for any time of day.

INGREDIENTS

  • 1 cup flour

  • 1 teaspoon salt

  • 2 tablespoons olive oil

  • 1/2 cup water, gradually, as needed

  • More olive oil to spread

  • Kraft cheese spread

  • Chips Oman

  • Tabasco sauce

PREPARATION

1. Sift flour and salt into a bowl, then add 2 tablespoons olive oil and rub with fingers.

2. Gradually add water, little by little, as needed, mixing each time you add a bit using your hands until it forms a dough.

3. Drizzle a bit of olive oil over the dough, form it into a ball and cover with towel, letting it rest for 20 minutes.

4. Divide the dough equally into about 3 or 4 small sections, and roll them out on a floured surface really thin.

5. Spread the thin layer with olive oil (traditionally ghee) and begin folding it in a zigzag, then twisting it to form a spiral before rolling it out again. This step creates those textured layers in a paratha.

6. Add a few drops of olive oil to a skillet on high heat and cook the paratha on both sides. Turn it over when you see it begin to bubble lightly. Remove from pan once it’s browned.

7. Repeat the process with the rest of the parathas.

8. Once all the parathas are ready, spread a generous amount of Kraft cheese onto each paratha and top it with chips Oman and a dash of Tabasco sauce (daqoos). Roll them closed and enjoy with a cup of karak tea.
